Could someone help me translations?

I've got a fair amount of texts to translate as part of a Danish course I'm taking. Could someone help me with translations? I don't have any good dictionary with me and can't find any, that's why I need help. For the Danish texts, I only need a translation of them in English. Then I've got French texts which I will translate in English and I'd be very grateful if you could then translate them in Danish? I'll post each text in a different post so it's clearer. Thank you to anyone who will help, and if you need any help with French, I'm here.

Rør forsigtigt hindbærrene i.

Hæld grøden op I en skål, og drys overfladen med en spsk sucker samt de flækkede mandler.

Server med knasesukker or fløde.

TIL 4 PERSONER

500 g blandede sommerbær, solbær, ribs, jordbær osv.
3 dl vand
250-300 g sukker
1 spsk majsstivelse, rørt ud i ½ dl vand
200 g hindbær
1 spsk sukker
3 spsk smuttede, flækkede mandler

Can someone please tell me what this sentence mean because no matter how hard I try, I just don't get it.

Jeg folder papiererne ud og lægger hånden over for ikke at bliver beluret.

Is "hånden" hands? Because I can't find it, and I think the plural for "Hand" is "hænder".

"I fold open the papers and lay my hand over so as to not be cheated"

"hånden" literally means "the hand", but in this context it means "my hand".
