Well, that's to be expected, unfortunately. Coptic has largely been nothing but a liturgical language for centuries.
It would be quite interesting if it was able to be revived, but I for one am not holding my breath.
My recommendation, if you really want to learn Coptic, is just learn one of the two major dialects that literature is written in. Sahidic or Bohairic. Might not be quite as fun as learning to speak it, but it's the surest way to actually get somewhere in my opinion.
You could always dabble in the revival after you've gotten some "classical" Coptic under your belt. And it might make more sense to you then.
