हम यहाँ दक्षिण एशियाई खाना बात कर सकते हैं. अंग्रेजी और हिंदी में, जो भी आप चाहें। सोचती हूँ कि खाना संस्कृति के साथ चला जाता है. जब हिंदी और उर्दू सिखने, आप हिंदुस्तानी और पाकिस्तानी रेस्टुरेंट जाने चाहें। खाना अहम सीखना है!

(Please forgive my awful Hindi, I'm not used to talking about food in it) Here we can talk about all the food from South Asia! I think food is really important with culture and goes with it. Plus if you are learning Hindi/Urdu you most likey will go into an Indian or Pakistani resturant. So I think knowing the food is important. I also wanted to make this thread because so many people I talk to too say they would never eat Indian food because they think it looks odd and that they use weird ingredients. That's actually not true at all. So hopefully if you are learning Hindi or Urdu or any other Indian langauge this thread will help you familairize yourself with it.

So for the basics I'm going to tell you about the common spices used in South Asian cooking.

1)Garam Masala ( गरम मसाला)- This is one of the most common ingredients. It is basically a mixture of popular spcices in South Asia. Everyone has their own recipee for it, but it is basically made up of black and white peppercorns, cloves, cinnamon, cumin seeds, and caradom pods. It is used in many dishes and can be mild to extreamly hot.

2)Curry Powder. Yes, curry is commonly used in South Asia, but not nearly as much as most people think. Actually Garam Masala resembles curry quite a lot and is used more than curry itself. Anyway curry powder consists of corriander, tumeric, cumin, red pepper and fenugreek.

Here are some of the spices names in Hindi:
दारचीनी-cinnamon
लौंग-cloves
धनिए-corriander
जीरा-cumin
मेथी-fenugreek seeds
सौंफ-fenel seeds
छोटी इलाइची -green caradom (small cardamon :P)
काली इलाइची-black caradom
सरसों-Mustard Seeds
जायफल-nutmeg
केसर-saffron
हल्दी- tummeric (this is EXTREAMLY common, I would say tumeric in Indian recipes is almost more common than curry)

Other important ingredients:

घी- (ghee)clarrifed butter, it's pretty common and pretty bad for health but many Indian recipes have it.
चाट मसला - chaat masala, this another spice mix like garam masala but it is useually used after the food is done cooking for more flavor. Sometimes it is even used on salads and fried things.

मैं कभी नहीं हिंदुस्तानी रेस्टोरेंट को गई। :oops:
जो हिंदुस्तानी खाना मैं खाती वह सब मेरे द्वारा पका जाता है

ज़रूर मुझे हिंदुस्तानी चाय बहुत पसंद है (दार्जीलिंग, मसाला चाय, वगैरह वगैरह)। करी भी वाक़ई स्वादिष्ट लगती है, तरह तरह के मसाले के साथ(पर मसालेदार खाना खाने के बाद मेरा चेहरा एकदम लाल हो गया और तब मुझे बहुत-से पानी पीना चाहिए! फिर भी मुझे मसालेदार खाना अच्छा लगता है)... ओ! और मुझे पूरी भी खाना पसंद है। लेकिन मैं अच्छी पूरी पका नहीं सकती।

चाय! ठीक, वास्तव में चाय भोजन नहीं तो... करी और पूरी! ये दो ही सब हिंदुस्तानी खाने जो मैं ने खाए हैं.... :oops:

हाँ, एक दिन मैं हिंदुस्तानी रेस्टोरंट को जाउंगी!

हिंदुस्तानी खाना पकाना आसान हैं. विशेषत शाकाहारी खाना, क्योंकि तापमान फर्क नहीं पड़ता :P

मुझे पकाना पसंद नहीं तो मैं अक्सर हिंदुस्तानी खाना नहीं पकाती। लेकिन मैं तुम्हारे बात से याद रख लूँगी!

A few comments here:

I think I usually see and hear this as धनिया.

जीरा-cumin

Also ज़ीरा.

मेथी-fenugreek seeds

I think this means just 'fenugreek'. It can be used for the greens, too (that's actually the context I usually hear this word in :lol:).

छोटी इलाइची -green caradom (small cardamon :P)
काली इलाइची-black caradom

I'm pretty sure that's also known as बड़ी इलाइची. ;)

Here are a few other spices:

(लाल) मिर्च/मिर्ची- red chili/pepper (I think green chili/pepper can be either हरा मिर्च or हरी मिर्ची, but correct me if I'm wrong about anything in this post, really)
हींग- asafetida

And other ingredients:

नमक- salt
चीनी- (refined) sugar
गुड़- unrefined sugar
प्याज़- onion
टमाटर- tomato
मटर- peas
आलू- potato
पानी- water
दूध- milk
पनीर- paneer (a type of Indian cheese, similar to cottage cheese, used in some North Indian dishes; see here for more information)
तेल- oil
मक्खन- butter

Vijay, I got all those names from a Hindi cookbook I copied the spellings right out of the book. It was one I got at an Indian bookstore in Edison :cry:
