A Hungarian folk tale uses the word 'ettem' or ate. Meaning the infinitive is 'etni'?
I also found the infinitive 'enni'.

Can 'enni' and 'etni' be used interchangeably or do their meanings differ.

There is no "etni", the infinitive is "enni" and the basic dictionary form of the verb is "eszik".

There are a few verbs of this type where the basic form ends in -sz and the infinitive ends in -n: tesz (tenni), vesz (venni), hisz (hinni), visz (vinni), eszik (enni), iszik (inni), lesz (lenni).
