I recently watched the Ukrainian series прятки.

I saw the version with a Polish voice-over.

I noticed that when the Polish translation was “nie wiem” (I don’t know) instead of “не знаю” it consistently (from different characters) sounded like “не зная” or even “не знай”… was this just me not hearing well? Is it a Ukrainian thing? A colloquial thing? Something else?

Hello! The meaning of words depends on the context.
For example, “не знаю” - I don’t know, “не зная” - the transgressive form, “не знай” - the imperative form.

But would the last two be translated "I don't know"? As I said the Polish translation would be "Nie wiem" (I don't know) and instead of не знаю which I expected, it sounded like one of the others...

It is difficult to say how it should be translated correctly. These two words “не знаю” (or "не зная" or "не знай") are only part of a sentence without context. (Can you write complete phrases in which they are used?). But they are all forms of the verb "знать" (to know).

I could see не зная being translated this way, especially in Polish; I could be wrong, but I don't think Polish has a direct equivalent to this. I think I have a little more trouble seeing не знай translated this way, though.

Не зная = not knowing
Он, не зная ответа, продолжал думать
He, not knowing the answer, continued to think.
