1. Although it would have been better had you provided some contexts, I believe 호(號) there is "courtesy name", and 호를 따다 is to name something after someone's 호.

2. "And he continued saying" while 있다 is mostly the verb for to be/to exist, it can also mean "to continue doing such and such" as well.
