As long as access to dictionaries and grammar resources isn't restricted, I should be able to produce broken some Irishy Gaelic or Manx (Gaelic would obviously be easier for me than Manx, but this is FUBAR after all). The larger problem might be finding someone who translates out of them again.
Or if you don't mind Germanic, Icelandic could be fun. More people might be able to continue the chain from there.

Sorry, maybe I should have been more specific, but since you were already using "Gaelic" without further specification, I just did the same and assumed it wouldn't cause confusion. I can see how my "Irishy" would add to the confusing, though. What I meant is Scottish Gaelic and Manx, which would probably both end up being influenced by my Irish.
Anyway, yes, just "Gaelic" generally means Scottish by default.
