The letters g and c change only when they are in front of e and i.
The g in gând is pronounced exactly like the one in gol.
It's exactly like in Italian.

Mulțumesc literally means "I thank" while mulțumiri literally means "thanks".
The 2nd one tends to be more used more for thanking for something specific like:
mulțumiri pentru flori = thanks for the flowers.
But none of them is more formal or correct than the other one.
And there are no carved-in-stone rules, mulțumesc just happens to be more common.
