Is it easy to learn Finnish if I know English and Spanish fluently?

I don't know very much about Finnish, but I can tell you a few things.
First of all, it's very different from both English and Spanish.
Finnish has 16 cases in use, think about how it is to learn all those 16 cases.
There will be enough people to tell you more about Finnish, this was only a beginning from me, hehe.

The hard part won't be the grammar, which you can always practice and get used to. It'll more be the fact that unlike an English speaker learning Spanish, you'll have almost zero vocabulary recognition. Every word you learn will be unfamiliar. There's also a big difference between written and spoken Finnish.

Let's say you'll have nothing to your English and Spanish. You'll have to start all over, from the beginning. But of course, when you're motivated you can make it. Although a Germanic or Latin language might be easier for you, because you speak English and Spanish. But hey, you can give it a try, if it's too hard you can always give up.

Learning another language is simple provided you put in the effort and are motivated after the initial novelty-phase wears off.

I am learning Estonian which is a language related to Finnish and the two biggest challenges were geting used to the grammar and being faced with a language in which I had almost zero vocab recognition. Now the grammar makes sense to me but I still have the issue of learning vocab.

Go for it and if you don't like it, no harm done. Finnish is just like any other language. Every language has its hard parts and simple parts and if you can find good support that will help you you'll do well.

I have just started to learn Finnish and find that learning words all over again to be the difficult part, with other European languages I am learning, the words are familiar an example being Cat and Dog, in Norwegian it is Hund and Katt but in Finnish it is Koira and Kissa.
Just from a personal point that is what slows me down a little, however I have found that keeping the motivation and seeing the results is very rewarding.
