That's Biblical Hebrew, and the other is Modern Hebrew. I confirmed with my textbook that it שֵׁנִית is the feminine form of second in Biblical Hebrew, but a quick web search says that שניית is the Modern equivalent. I'm sure Golv and/or Babelfish can confirm this. Which form of Hebrew are you learning?

Instances of שנית as an ordinal number in the Bible:

"וַיַּעַשׂ לֻלְאֹת תְּכֵלֶת...בַּמַּחְבֶּרֶת הַשֵּׁנִית" (שמות לו, יא)
"שֵׁם הָאַחַת עָרְפָּה וְשֵׁם הַשֵּׁנִית רוּת" (רות א, ד)

The form שניה doesn't occur at all in the Bible, but is already wide in use in MIshnaic Hebrew, where it replaces שנית as the ordinal number, which is still kept as the adverbial form.

Both are correct, the former sounds more natural to me. The latter somewhat emphasizes that Moshe is a teacher of ours, one of our teachers. The former does sound as if we have only one teacher, so it kind of asks for context - our teacher for what (or that indeed we have only one teacher).

Good question I assume it's a floating schwa, as in the form מַלְכֵי - a schwa which has originated in a vowel (the second -e- in מֶלֶךְ). We've studied this in school regarding construct state, such as מַלְכֵי, but derived words such as מַלְכ֖וּת weren't mentioned.
