The simple past is enough since we're talking about yesterday, a day that has completely finished. Using the perfect aspect makes me think there will be some connection to the present. For example, you could say "we haven't had a holiday in ages / we haven't had a holiday in such a long time". In this case, the connection is that starting from the present and going back into the far past, there has been no holiday (at least that the speaker can remember). Also, colloquially I think it's more common to use "so". I think of "therefore" as having a slightly higher register than "so", and so it's a word usually found on essays or in math proofs or in fancy speech.
