Kia ora! I'll share my Maori progress here. I can form some basic sentences only, but I'll improve!

Kei te hiahia ahau ki te haere. - I want to go.
Kei te hiahia ahau ki te haere ki te kura. - I want to go to school.
Kāore au e hiahia ki te haere ki te kura. - I don't want to go to school.
Kei te haere te kōtiro ki te kura. - The girl goes to school.
Kei te haere te kōtiro ki te kura ia rāwiki. - The girl goes to school every weekday.
E whakarongo ana au i te puoro. - I'm listening to music.
E pānui ana au i te nūpepa. - I'm reading the newspaper.
Nō Tākei ahau. - I'm from Turkey.
Kei te noho ahau kei Ankara. - I live in Ankara.
Kei te hiahia ahau ki te inu i te tī. - I want to drink tea.

What are the differences between au and ahau?

Afaik, there is no difference. Au is just a short form of ahau.
