(It's made by freeze-drying potatoes in winter. You leave the potatoes outside so they dry out during the day in the sun and freeze overnight for several days. In the end, you get something that looks like styrofoam but is edible and lasts a long time, and Inca armies used to use this for food supplies).

Thanks! I found it in a really interesting article in Smithsonian about potatoes (they call ch'uñu by its (Andean?) Spanish name chuño). I think that article actually really helped me understand how Europe became so powerful, and I had no idea until I read that article how incredibly important potatoes were for feeding Europe and preventing famines, which in turn led to a dramatic improvement to the standard of living.
