C'est possible car les systèmes phonologiques sont très variables en français de France (ou d'Europe). Pour simplifier ce point très schématiquement, on peut opposer la phonologie "méridionale", pour laquelle le phonème /ɛ/ est inexistant en position finale (et donc, pour les monosyllabiques en particulier, inexistant tout court), à la phonologie "septentrionale" qui admet (et même exige) le phonème /ɛ/ en finale (règle applicable aux monosyllabiques : <est>, <hait>, <ai> etc sont prononcés /ɛ/). À ma connaissance, la seule exception à la règle méridionale est le mot <ouais> → /wɛ/. Mais peut-être y en a-t-il d'autres ?
